This
recipes are served in one pan. It is a possibility for a meal if you
expect eight, ten or more people because it is easy to take more of all
ingredients. Easy enough is also to serve it with rice or noodles.
So,
try this recipes and have a nice dinner with your friends.

Preparation

Recipe
Ingredients
3 tbs olive oil
3
tbs flour
2 tbs peanut oil
1 hackled onion
3 celery stalks, cut into pieces
2 hackled garlic gloves
2 cups hackled okra (frozen is also fine)
2 tsp thyme
½ tsp cayenne pepper
2 bay leaves
2 cups fish stock or 2 cups vegetable stock + 2 cups clam juice
2 cups peeled tomatoes with their juice
2 pounds peeled and deveined medium shrimp
Tabasco sauce to taste (about 4 dashes)
Salt and black pepper to taste
Preparation
-
Heat
a little pan with the oil over medium heat and add the flour

Reduce
the heat mix both until it is deep brown (for about 10 min)

The
roux is now ready and you can set it aside

Take
a large pan and heat it with the peanut oil and add the celery and
the onion (about 4 min)

Add
cayenne pepper, okra,
bay leaves, thyme and stock and boil it for 2 min
-
Add
the roux and cook until the stock becomes thick (1 min) , simmer
now for about 7 min

Add
the shrimp and heat them in the stock for about 6 min

Taste
with Tabasco sauce, salt and pepper and take out the bay leaves
