Portuguese Shrimp Recipes
Shrimp Recipes are In Portugal
often called "petiscos" Recipes. Shrimp or prawn dishes are usually
enjoyed in Portugal with dry red wine or beer.

Recipe
Ingredients
-
2 and 1/2 lb (1.2
Kg) of shrimp (boiled, de-veined and diced
-
1 and 1/2 lb (1.2
Kg) of boiled and diced white potatos,
-
1 medium chopped
green pepper,
-
1 chopped onion,
-
4 eggs,
-
1 cup of milk being
1/2 evaporated milk and 1/2 water,
-
salt and pepper to
taste,
-
chopped parsley to
taste,
-
2 cups of flour.
Preparation
-
Mix shrimp, potatos, green pepper and
onion.
-
Beat the eggs and add them and the milk.
-
Add salt, pepper and parsley and mix.
-
Now add the flour until you can pick the
mixture by the table spoon full and form it into little balls. Make
sure it holds together when you drop it into some hot oil to fry.
-
Fry a few at a time in vegetable oil and
drain them on paper towels.

Prawn Bisque Quarteira Style (Ensopado de Camarao a moda da
Quarteira)
Recipe
Ingredients
-
450g (1 lb) of
prawns,
-
100g (3 and 1/2 oz)
of onions,
-
250g (9 oz) of
fresh tomatos,
-
100g (3 and 1/2 oz)
of butter,
-
1 bunch of parsley,
60g (2 oz) of flour,
-
3 small chalice of
brandy (Macieira is a good choice),
-
1 dl (3 and 1/2 oz)
of cream,
-
1 bay leaf, salt to
taste,
-
pepper or piripiri
(chili) to taste,
-
water, a
-
sauce made
from olive oil and chili,
Preparation
-
Wash the prawns.
-
Put a deep pan on the flame.
-
Place the prawns in the pan, cover them
with water and cook.
-
Take out the prawns when they are cooked
and pass the cooking liquid through a fine strainer.
-
Peel the onions and cut them up finely.
-
Take the stems of the tomatos, scald the
latter and then peel, de-seed and dice them.
-
Wash the pan and put it again on the
stove and then add the butter, onions, bay leaf and a bunch of
parsley.
-
Fry this mixture. Meanwhile, choose the
prawns, placing the edible part on one side and the heads on the
other.
-
Add the flour to the pan, stir and cook
for a few minutes without burning.
-
Add the prawn heads, crush them in the
brandy, set fire and let it blaze.
-
Add the tomato and the liquid obtained
by cooking the prawns. Cook.
-
After everything is cooked, strain,
using a fine colander.
-
Add the cream, which should be highly
consistent and part of the butter.
-
Stir to obtain a very soft cream.
-
Cut the edible part of the prawns in
half and garnish the bisque with them.
-
Sprinkle with chopped parsley.
-
The bisque can also be garnished with
diced toast.
Shrimp
Toast (Tostas de Camarao)
Recipe
Ingredients
-
1 and 1/2 lbs (700g) of fresh frozen
shelled and deveined shrimp,
-
6 oz (170g) of ground pork,
-
1 table spoon of port wine,
-
1 table spoon of soy sauce,
-
1 tea spoon of salt,
-
1/2 tea spoon of black pepper,
-
1/2 cup of finely chopped green onions
cornstarch,
-
1 tea spoon of sesame oil,
-
3 eggs,
-
10 to 12 thin slices of white bread,
-
1/3 cup of dry bread crumbs,
-
1 cup of oil for frying.
Preparation
-
Soak shrimp in salt water and drain
well.
-
Chop finely and mix pork, Port wine, soy
sauce, salt, pepper, green onions, 1/2 table spoons of cornstarch,
sesame oil and one egg.
-
Mix well by hand.
-
Dredge each slice of bread in cornstarch
and shake off excess.
-
Spread shrimp and pork mixture
generously over one side of each bread slice.
-
Beat remaining eggs in a bowl.
-
Brush egg over bread and filling.
Sprinkle bread crumbs over filing.
-
Cut bread slices into quarters
diagonally.
-
Heat oil in deep fryer to 375F (190C).
-
Slidebread, filing side down into hot
oil.
-
Fry until golden, then turn to brown
other side lightly. Drain on paper towel and serve hot.
