Crawfish
can be found all over the world in freshwater. Even in Africa where they
are not native but
introduced.
There
exist two main species of Crawfish – the red Swamp Crawfish and the
white River Crawfish. Over 90% of these two types are harvested in the
United States. The red Swamp Crawfish can also exist in warmer water and
poorer water quality unlike the white River Crawfish.
The
crawfish are harvested in breed or wild during November to June.
When buying a fresh Crawfish for your own kitchen to prepare tasty Crawfish Recipes, it is very important that they are alive or frozen immediately after the harvest. Otherwise the meat will become uneatable.
